Fromage

Have I really not written anything about cheese yet?!?!

Well, yesterday I discovered a particularly delicious raw milk cheese:
Tête de Moine.

One doesn't "cut the cheese" when eating Tête de Moine, but rather pares it (on le racle) with
une Girolle. This makes beautiful little rosettes that melt in your mouth.
